Easy Vegan Spring Rolls!

The first meal that I had after my seven day juice cleanse was spring rolls, and let me tell you..they were heaven!! I recently purchased some rice paper at the grocery store, along with a mandolin slicer with the intention of making some spring rolls.

I sliced up all of the veggies that I had available: Carrots, zucchini, cucumber and bell pepper. I also chopped some cabbage and added cilantro to each spring roll.

Then I dipped a rice paper into a bowl of water, just enough to make the paper pliable. Too much water will easily rip the paper.

I placed a bit of each veggie into the center of the paper, added the cabbage and cilantro, then proceeded to roll up the spring roll. I brought in the shorter ends first, and with the veggies in the center, I brought in one of the length sides, covering and gently tucking it in underneath the veggies before finishing the roll.

It was late and didn't have time to make a dipping sauce this night, so I bought some peanut sauce from my job. I packed these up for lunch for the next day and they were amazing! So simple, yet refreshing, delicious and healthy!!

Please keep in mind that these can get really sticky, so it's best not to stack them.

I'll definitely be making these again, and I'll write a post about the sauce I choose. I definitely love peanut sauce or a sweet chili sauce..vegan of course :)

If you decide to try these, use any veggies that you want!! Maybe even add some fruit like mango or strawberries! Mmm...

Good question.. possibly because our tiny house is still under construction.. The pictures help me hide the chaos lol. I would like to try that though :) Thanks for the suggestion @nathanmars

Think about what you want to learn, learn it in front of others. Pay attention to what others are not sharing.
Look for voids that you can fill with your own efforts.
