Best Gluten-Free, Dairy-Free Chocolate Chip Cookies!
Today's post is my entry for @khackett's Random Challenge of The Day #17
I have a friend who likes cookies, but is gluten-free/dairy-free, so I got Almond flour for this batch and used a recipe that didn't call for milk. Don't worry, it still has sugar in it!
The recipe is on the back of the Blue Diamond Almond Flour package. It calls for:
- 1/2 cup butter, softened
- 1/4 cup packed brown sugar
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 egg + 1 egg white
- 2 1/2 cups Almond Flour
- 1 cup dairy-free chocolate chips
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Preheat the oven to 350F.
Combine wet ingredients.
Mix all ingredients together
Place on cookie sheet or parchment paper
####Cook for 12 - 15 minutes
It should be enough for approximately 18 medium-sized cookies.
The cookies didn't taste quite like regular gluten-filled cookies, but as far as gluten-free cookies go, I think they were pretty good. I would make them again.
