Punugulu recipe
Learn to make crispy punugulu with step by steb photos.punugulu is a common street food in the coastal region of andhra pradesh.these are crispy deep fried popular snack that is made of urad dal and rice batter.
Prepare time : 5 minutes
Cooking time :15 minutes
Total : 20 minute
INGREDIANS. :-
. 2 THICK cup idli dosa batter or 1/4 cup urad dal and 3/4 cup rice
. 2 table spoon poho/attukulu of rice powder
. salt to taste
. oil for deep fry
. 2 green chilies chopped
. 1 large onion chopped
. 1/2 table spoon cumin seede
.1/4 cup coriender leaves chopped
.1/2 inch ginger chopped
How to make the recipe :-
PREPARATION:-
1.You can skip the steps if you use idli dosa batter.wash urad dal and rice separetly wash untill the watter looks clear
2.Soak them from atleast 4 hours
Grind dal to a smoth batter with just enough water and salt with out making ir runny.
Grind rise closelyand mix it well with dal batter.check the consistency now.it has to be thicker than pouring consistency.
5.If the batter is runny add poha or rice powder .set this for 10 minutes .it becommes thicketr after it is soacked.Now adjust the consistency .Now the bayter look like given image.
6.Now add cumin seedes,onion,chopped chilies,chopped ginget,chopped curry leaves all of them and mix well
MAKING PUNUGULU:-
1.Heat oil to hot,adjust the flame to medium high,it must be a too low and not too high.
- Shap the batter to round balls with your fingers and drop them in the hot oil.
- Fry them till golden color
4.Now transfer them to paper napkins
5.Serve them with your favorite chutney !
