Plant ID: Does Anyone Know What This Is?

I've seen these pretty purple plants around for a while, and finally got a good picture of one.

They seem to be just a single stalk with largish long leaves all up and down it. They also have the "flower" on top that seems to always be full of little seeds or something?

Not sure if it's ornamental or if it is used in cooking.

This (should be) Amaranth of some variety! (85% certain) would need to be next to it to really be sure. Flowers look right (inflorescenes/cluster) leaves have similar look (slight alternative/ alt. veination). If it is Amaranth the grain should be edible but investigate a bit more if you really wish to partake, I can't think of anything currently that mimics it that would be of any danger. Hope I sent you on the right trail!
