Healthy Lunch with Quinoa Salad
Quinoa is not readily available item here but after reading its nutrient properties, I was more than keen to get it. Its a very nutritious and health meal to start with if you are following 8 hours fasting diet.
It looked simple but total ingredients for Quinoa Salad were many and it took some time to prepare it.
- 1 tablespoon garlic
- Diced onion as you like
- Salt is also optional
- 1 tablespoon black pepper
- 1 full bowl of quinoa
- Diced tomato
- Diced cucumber
- Corn (Fresh would be preferred than canned)
- Fresh Cilantro and mint
- You can use any oil but I used olive oil to cook
- and finally Vinegar
Slice all the requisite vegetables at first
Heat the olive oil in pan with medium heat. Cook and stir all the vegetable for about 5 minutes. Pour some water and salt, let it boil. Stir all the quinoa in this amalgam. Let it boil for about 15-20 minutes. All the water should be boiled at the end
I hope you like it as meal, you can store it for few days and then prepare fresh again.
