Jerk Chicken Sandwiches

INGREDIENTS
3 boneless skinless chicken breast halves
½ cup Kowalski's Extra Virgin Olive Oil
2 cloves Minnesota Grown garlic, finely minced
1 tbsp. finely chopped fresh Italian parsley
1 tbsp. jerk seasoning, such as Luvafoodie Jammin Jamaican Jerk Seasoning or our recipe for Jerk Seasoning
- freshly grated zest of 1 lemon
1 tsp. hot sauce
¼ tsp. kosher salt
¼ cup mayonnaise
1 tbsp. freshly squeezed lemon juice
3 Kowalski's Butter Burger Buns, lightly toasted - baby arugula and Kowalski's Fresh Mango Salsa, for serving
DIRECTIONS
Butterfly or pound chicken lightly to an even 1/4" thickness; set aside. In a large mixing bowl, whisk together next 7 ingredients (through salt). Reserve 2 tbsp. oil mixture in another small mixing bowl. Add chicken to large bowl; toss to coat with marinade. Refrigerate, covered, for 30 min. to 2 hrs. Whisk mayonnaise and lemon juice into reserved marinade; set aside. On a grill preheated to high, grill chicken over direct heat until cooked through (about 8 min.), turning once. Remove from grill and tent with foil; let stand for 5 min. Serve chicken on buns topped with mayo mixture, arugula and mango salsa.
