Does it form a sort of scoby on top? I haven't made any apple cider vinegar only kombucha and keifer. I'm up to my eyeballs in the 2 gallon jar of the Braggs Apple Cider Vinegar my husband bought a while back. I'll have to give it a whirl when that's all used up!

It's a mother of vinegar. The thing people call a scoby is actually called a pellicle. It's a cellulose mat that the acetobacteria (that exist in both kombucha and apple cider vinegar) produce as a by product. It's actually not necessary to brew kombucha or vinegar. It does hold the liquid suspended in it but at the end of the day with both kombucha and apple cider vinegar the liquid is the gold, the mat is just a byproduct!

So it's literally the same thing! The difference between kombucha and acv is the yeast in the kombucha. So kombucha produces mats and the yeast in it produces the brown globs new brewers are often so freaked out by. haha
