My secrets:

Only fresh eggs are needed to prepare the dough. Fresh eggs are better kept in a whipped condition.

When whipping the protein, you can add sugar instead of sugar. Budra is added less than sugar.

When whipping the protein, add salt and citric acid.

To prepare the sponge cake, take sour or sweetly sour apples.

For cooking, you will need:

Sugar - 200 grams

Beat at high speed. At this time, the protein gets a fluffy white color. This process is repeated until the necessary amount of sugar is consumed. Soon the protein will become more dense, smooth and uniform.

If solid peaks appear and the protein mass does not flow out of the inclined dishes in which it is located, then the protein is ready. It is important to ensure that the whisk at the beating reaches the bottom of the container and whipped the entire volume of protein. We add yolks and vanilla sugar. We continue to whisk at high speed. Our mass acquires a yellowish color due to the yolk and continues to thicken. Add the flour. All is well mixed with the help of a whisk of a mixer at a low speed until the homogeneous state of the dough.

Lubricate the bottom and sides of the mold for baking with butter and pour the dough from the container into the mold. We spread apples. In a preheated oven to a temperature of 180 ° Put our cake. The pie is baked for 30 - 40 minutes. Check the preparedness of the biscuit with a toothpick. It is important to stick it into the dough, and not into apple slices. If it stays dry, then our dough is ready.
