It's beginning to feel like summer
I don't know about you but I am ready for summer. It's been so foggy lately. Foggy and cold like an old black and white film. While the East Coast and the south got a blizzard, we got the fog, cold and depressing. So when Alexa (Amazon Echo) told me this morning that it would be sunny and 80 degrees I knew I was beach bound.
First I took the girls to the park so they could enjoy some of the sunshine. I love watching them get excited when I tell them we're going to the park. They love to ride in the car with their heads out the window. Rey immediately wants to start playing fetch, and Leia greets the other dogs. But before long, they're both taking a break in the shade.
Once I knew they were all fetched out, I got them settled at home with peanut butter filled Kongs, and I went straight to the beach. Well, first I made a blended strawberry mojito…and then I went to the beach. It was warm and perfect, and the drink cold and refreshing.
Am I the only one who can work up an appetite just from lying out in the sun? What is it about soaking up the sun that makes you want to have a feast? I don't get it. But I knew that this California weather was calling for enchiladas.
These babies are filled with vegan refried beans (meaning no pig fat in the mix), grilled onion and bell pepper, and Tex-Mex Jackfruit, which feels and tastes like a roast beef. And they're topped with verde salsa, jalapeños, and vegan mozzarella. Mouth watering. It was only appropriate to wash them down with a Captain and Coke. It's been a refreshing weekend.

We got about 3 inches up here. Not sure about anywhere else. I’ve been intside since Thursday night.
