Carne azul
El Lingcod azul es un pez de la familia greengram Hexagrammidae. Es el único miembro existente del género Ophiodon. Es nativo de la costa oeste de América del Norte, desde las islas Shumagin en el Golfo de Alaska hasta Baja California, México. Puede alcanzar un tamaño de hasta 152 centímetros y un peso de 59 kilogramos. Se observa en varios tonos de gris. Alrededor del 20% de los lingcods tienen carne de color azul verdoso a turquesa. El color se destruye al cocinar. Se menciona que el color puede deberse a la biliverdina, pero esto no se ha establecido oficialmente. Dejando la causa de su coloración en duda.
