Ingredients
Peanut Butter Sauce:
1/4 cups peanut butter
1/4 cups hoisin sauce
2 tablespoons soy sauce
2 tablespoons maple syrup
1 tablespoon rice vinegar
1 teaspoon sriracha sauce (or to taste)
3 garlic cloves (minced)
1 teaspoon ginger (freshly grated)
1/3 cups water
Stir Fry:
1 tablespoon sesame oil
1 pound extra firm tofu (drained)
1 tablespoon vegetable oil
2 cups broccoli
2 medium carrot sliced
1 red bell pepper (cut into strips)
2 onions (medium, cut into 1 inch pieces)
1/4 cups roasted peanuts
Serve with Rice or noodles
Method
Mix together all ingredients for peanut sauce, pulse blend for a few seconds to make it even creamier!
Add the Sesame oil to a pan, when oil is hot, add tofu cubes, fry for about 10 minutes, turning once until lightly browned and crispy! Set Aside.
Add vegetable oil to the pan, add veg, stir-fry until the veggies have softened but still crunchy. Lower heat to medium.
Return tofu to pan, and add peanut sauce and peanuts. Stir until everything is coated with peanut sauce and warmed through.
Serve with rice or noodles, Garnish with coriander.
