Mustard is an oilseed crop. Mustard is an annual plant. It is native to Asia. Mustard oil is extracted by grinding mustard seeds. Mustard seeds are used as a spice. Mustard leaves are quite popular as a vegetable. Mustard is cultivated as a winter rabi crop in various parts of Asia including the Indian subcontinent. Mustard flowers are self-pollinated. Mustard plants are about 1 meter tall, but rye mustard can grow up to 2 meters tall.

Mustard is cultivated in Bangladesh during winter on about 3.5 lakh hectares of land (2020). Different varieties of mustard seeds contain about 40-44% oil. The annual production of mustard oil in Bangladesh is about 2.5 lakh tonnes (2020). Mustard husk contains about 40% protein. Three types of mustard are cultivated in Bangladesh, namely Maghi mustard, Rai mustard and Dhali mustard.
