TRUE OR FALSE BY @janusface: Sushi Is Fresh and 'Extremely' Healthy AN UPDATE

Some days ago, I made this riddle about Sushi, called ‘Sushi is fresh and extremely healthy, or is it Janus-faced’?

In retrospect this was kind of vague and difficult to comprehend.

Is sushi ‘fresh’?

Here I mean fresh as a synonym for not frozen.
At least in Norway, and probably most of the Western world, the fish has to be frozen at -20℃ for at least 24 hrs, and preferably 5 days, prior to consumption to kill two parasites known as Anisakis simplex and Pseudoterranova incipiens that live in wild fish. Farmed fish do not need to be frozen if they can certify that the fish is free from parasites.

Anisakis is based on anis- (Greek prefix for different) and akis (Greek for spine or spicule). Anisakiasis is a human parasitic infection of the gastrointestinal tract caused by the consumption of raw or undercooked seafood containing larvae of the nematode Anisakis simplex. The areas of highest prevalence are Scandinavia (from cod livers), Japan (after eating sashimi), the Netherlands (by eating infected fermented herrings (maatjes)), Spain (from eating anchovies and other fish marinated in escabeche), and along the Pacific coast of South America (from eating ceviche).

Within a few hours of ingestion, the parasitic worm tries to burrow though the intestinal wall, but since it cannot penetrate it, it gets stuck and dies. The presence of the parasite triggers an immune response; immune cells surround the worms, forming a ball-like structure that can block the digestive system, causing severe abdominal pain, malnutrition, and vomiting.

90% of Anisakis infection today is in Japan.

Is sushi ‘extremely’ healthy?

This is obviously a very vague statement.
The could be many reasons why sushi is not extremely healthy as some of you proposed: High sodium, arsenic in rice, mercury content, food born illnesses and microplastic.

In sushi itself it is a fish that is not particularly healthy and could even be toxic if overconsumed...

This is Escolar (smørfisk). I do not like it that much as it has this buttery taste.

Escolar (Lepidocybium flavobrunneum) cannot metabolize the wax esters (gempylotoxin) naturally found in its diet. This gives the escolar an oil content of 14–25% in its flesh.
Escolar's wax ester content can cause keriorrhea (Greek: flow of wax). Symptoms range from stomach cramps to rapid loose bowel movements, occurring 30 minutes to 36 hours following consumption.
This condition may also be referred to as steatorrhea.

Italy and Japan have banned the sale of escolar due to its potential side effects. It has been banned for consumption in Japan since 1977, as the Japanese government considers it toxic.

Even though any of the contenders did not got exactly what I meant, which was probably difficult, @digitree mentioned foodborne illnessess, and if sushi is not frozen (and probably even then) various parasites can be a threat by eating sushi.

i have no idea about it and i thinki sushi eated in japan more than from world other countries

i never ate sushi and after reading it looks i have very rare chance of eating it heheh

I guess it just slipped past me when I went through my feed. I wouldn't have got it anyway to be honest haha
Anisakis sounds pretty nasty and I'm glad that cold temperatures are able to kill these parasites.
The buttery taste to the Escolar sounds nice but not the wax esters. I'd preferably not want stomach cramps and pains @janusface haha

Good content friend. Indeed all this time the fish in the freeze so as not to rot. But the better fish are taken in the pond and then on the roast it is fresher
