Rhubarb Lilac Lemonade: The Perfect Sprintime Indulgence

Today I walked around the garden harvesting some of the lovely perennials that were ready to be turned into lovely creations.

I gathered a basket of lilacs and rhubarb and they looked so beautiful together in the basket that I just had to work on some recipes paring them together in the kitchen.

Earlier in the week I had made a lilac infused honey and loved it. Today I made a rhubarb lilac lemonade sweetened with honey and it might be my new favourite drink combination. t's like spring in a glass; exciting, tangy & fresh. This lemonade is also really good with a splash of vodka and a drizzle of home-made blackberry juice for that deep gradient and a bit of bubbly water for fizz.

After a hot and buggy day working outside, it was a lovely guilt free treat to cool down with. All natural ingredients, no preservatives and fresh from the garden.

To make this easy lemonade you don't need to be exact with measurements.

  • three stalks of rhubarb (chopped up finely)
  • a handful of lilac flowers (all the green bits removed because they taste bitter)
  • 2 -3 lemons
  • 8 cups of water
  • honey to taste

Add the water, lilacs and rhubarb to a pot. Bring to boil and removed from heat allowing it to steep until cooled. All of the flavour will sweat out of the rhubarb as it steeps. Once cooled sweeten with honey to taste.

yummie, this looks soo good which reminds me I need new rhubarb for me garden. Died in snow this year.... I'll have to try this next Spring when I have fresh lilacs thanks!

ah, that's too bad about your rhubarb. I should probably start mulching ours in the fall just to be safe, I never really thought about the possibility of it dying.

The lemonade drink looks tempting, I am sure it must be. When I looked at the picture I thought it was coconut water with rose petals in it. Enjoy your drink :-)

oooh, coconut water and rose petals sounds really nice. I don't drink juice a lot but this was a nice treat! :)

My first thought, what a combination! But as I read on, the idea looked more and more delicious. I've yet to do anything with my rhubarb....

This was our first rhubarb recipe of the season, I have a bundle on the counter and I don't know what I want to do with all of it. I made a rhubarb compote last year that was so delicious I could eat it every day ...will; make that and then maybe just chop it up and freeze the rest for later.
