Moroccan mint tea , or atai as it commonly known , plays a vital role in Moroccan culture. Although packed with antioxidants, this green tea blended with mint leaves is the drink of hospitality rather than of health . In a country where women most commonly prepare refreshments in the home, Atai is traditonally a man's affair. Ritually mixed and presented to guests as an ice-breaker, its preparation is considered something of an artform and os relatively complex compared to tea-brewing methods elsewher. Eye -flickeringly sweet (around five teaspoons of sugar are used pet tesspoon of tea )
The beverage is poured from a height of aruond half a meter, resulting in a foamy head and an aerted and aromatic golden liquid. The longer the tea steeps in the pot the stronger it becomes, hence the popular saying : the first glass is as gentle as life , the second glass as stong as love, the third glass as bitter as deth.
No social meeting is complete without a minimum of three glasses; the mild dogestive is considered so fundamental to almost all daily interactions that it is laughingly referred to as " Berber Whiskey " If you are lucky enough to be invited into a Moroccan home , expect to liberally partake of this symbol of friendship; to of hostility. What is more , no business as becomes immediately apparent when haggling in the souks

شاي النعناع
يلعب الشاي بالنعناع المغربي ، كما هو معروف ، دورًا حيويًا في الثقافة المغربية. على الرغم من أن هذا الشاي الأخضر المليء بمضادات الأكسدة ، إلا أنه يمتزج مع أوراق النعناع وهو مشروب الضيافة في المغرب
، يعتبر الشاي أمرًا تجاريًا للرجال. يختلط بالطقوس ويعرض على الضيوف
ويعد إعداده شكلاً من لأشكال الفنية ومعاملة معقدة نسبياً مقارنة بطرق تخمير الشاي الأخرى.
عين حلوة الملمس (حوالي خمس ملاعق صغيرة من السكر لأجل ملعقة صغيرة من الشاي)
يسكب المشروب من ارتفاع متر ونصف ، مما يؤدي إلى رأس رغوي فوق الكأس.
وكلما كان الشاي ينساب في القدر ، كلما أصبح أقوى ،
و لإكتمال المجمع فالحد الادنى هو ثلاثة أكواب.
و يشار إليه على نحو الضحك ب " ويسكي العرب "
