It seems tomato fried with eggs is quite a common dish in certain parts of China.
I never have it till some years ago I had it in Shanghai and started noticing places in Singapore having them.
I have tried to cook it myself. I imagine it's easy only after failing a few times. haha.
So, maybe a recipe will help. This one seems have nice pictures so I assume the author is successfully master this.

I'm not sure if you must peel the tomato and how it comes out with and without the skin.
I quite like to have the skin. Maybe it makes them bit more sour.
If you google "tomato with fried eggs recipe", some youtube comes out too.
