1/4 cup ice water
1 egg
6 cups diced fresh or frozen mangoes
1/4 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon ground allspice
1/2 cup to 2/3 cup granulated sugar (depending on the sweetness of your mangoes)
1 tablespoon cornstarch
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger

Instructions:

Preheat oven to 400 degrees F (200 degrees C).
To make the pie crust, combine the flour and salt in a large bowl. Cut in the butter until the mixture resembles coarse crumbs. Add the ice water and egg and mix until the dough just comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
In a large bowl, combine the mangoes, flour, granulated sugar, lemon juice, salt, allspice, cinnamon, nutmeg, and ginger. Toss to coat.
On a lightly floured surface, roll out the pie dough to a 12-inch circle. Transfer the dough to a 9-inch pie plate and crimp the edges. Pour the mango filling into the prepared pie crust.
Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
Let the pie cool completely before slicing and serving.

Tips:

For a richer flavor, use heavy cream instead of milk in the custard.
If you are using frozen mangoes, be sure to thaw them completely before using.
To prevent the pie crust from shrinking, freeze it for 15-20 minutes before baking.
If the mango filling is too runny, you can add a bit more cornstarch.
Serve the pie with a scoop of vanilla ice cream or whipped cream.

Variations:

For a mango coconut pie, add 1/2 cup of shredded coconut to the mango filling.
For a mango macadamia nut pie, add 1/2 cup of chopped macadamia nuts to the mango filling.
For a mango lime pie, add 1/4 cup of lime juice to the mango filling.
For a mango ginger pie, add 1 teaspoon of grated ginger to the mango filling.
No matter how you make it, mango pie is a delicious and refreshing treat that is sure to please everyone at the table.
