Rainbow Salad Platter
Hi all. I have made a healthy and delicious rainbow salad platter for lunch.
▫1 tbsp reduced-fat Greek natural yoghurt
▫1 tbsp blueberries, fresh or frozen
▫1 tsp balsamic vinegar
▫1 tsp extra virgin olive oil
▫1 tsp honey
▫1/2 cup mixed lettuce leaves
▫1/2 medium carrot, grated
▫1/4 cup corn kernels, fresh or tinned
▫1/2 tomato, chopped
▫1/2 baby fresh beetroot, grated
▫1/4 cup purple cabbage, shredded
▫50 grams tinned black beans, drained
▫1 tbsp almonds, chopped
Place yoghurt, blueberries, vinegar, olive oil and honey in a blender and blitz until smooth, to form a dressing.
Combine lettuce, carrot, corn, tomato, beetroot, cabbage and black beans in a bowl or place on a plate in the colours of a rainbow.
Drizzle over dressing and sprinkle with almonds to serve.
