Thai Food Recipe: Vegetarian Pickled Bamboo Shoots in Yellow Curry 🍽 🍛🍛 🍽

Hi, It's me again! I have a very spicy stuff with me today 😱 I made this curry for dinner. Just eat it with steamed jasmine rice, very simple and healthy. The main ingredient in this recipe is the pickled bamboo shoots which is my favorite as it got a very unique and exotic smell. If you buy pickled bamboo shoots from the shop, make sure that you rinse them well before using. Because normally the the pickled tastes very sour and if you don't rinse them first you might end up with a very sour curry--sometime I even put them in a hot water to reduce the strong taste. ---oh, I normally taste them before cook just to know how strong they are 😙

Another thing is the curry paste. I believe that you will be able to find the yellow curry paste from a supermarket. The one I'm using is vegetarian which I brought from a shopping mall nearby here. Normally you can store them in the fridge for very long time. I also sometime make the paste by myself if I couldn't find a vegetarian one anywhere. So if you wish to know how to make the curry paste, let me know.

Ingredients:

  • 1 cup of bamboo shoots
  • half a cup mushrooms of your choice
  • 4-5 Kaffir lime leaves
  • 1 and a half cup of coconut milk
  • 1 goat pepper
  • 1 tablespoon vegetarian yellow curry paste
  • 2 teaspoon of coconut sugar
  • 1/3 teaspoon salt
  • 2 teaspoon mushroom sauce

Directions:

  • Warm a pan in a medium heat, add 1/2 cup of coconut milk. When the coconut milk starts to get bubbles then stir in yellow curry paste for about 3 minutes until it's golden brown with a little bit of oil come out from coconut milk.

  • Add mushrooms and kaffir lime leaves. Stir until the mushrooms are shrink.

  • Add bamboo shoot and the rest of coconut milk. Stir and wait until the curry is boiled then add coconut sugar, salt and mushroom sauce and stir.

  • Add goat chili while removing the heat.

  • I like to sprinkle some sesami seed on the curry just like in the photo and serve with steam rice.
