What I Ate Wednesday

So its that time of the day...dinnertime. What do I make today is the question I always I ask myself and I get tired of eating the same recipes over and over again. Well, I've made it a mission to try new recipes and the key is thirty minute meals. It can de done, but it is much easier if you plan ahead and have all your ingredients at hand. So today I'm sharing what I ate last Wednesday. A simple, quick Summertime grilled chicken strawberry salad. We're trying to eat a bit more healthy so yes we had a salad for dinner.

What you need:

*Chicken breast
*Spring mix salad (romiane and spinach mix)
*Bell pepper- red/green/yellow for the pretty color
*Strawberries
*red onion
*salt & pepper
*1 tsp olive oil
*1 lime
*2 cloves garlic
*1/4 jalapeno optional

How to Make:

  1. chop the garlic and sauté in olive oil until slightly golden (I use a calphalon grill pan)
  2. add the chicken, let it cook about 4-5 minutes per side
  3. mix the spring salad in a bowl
  4. slice the peppers, strawberries & red onion
  5. dice the jalapeño small
  6. while you are dicing & slicing let the chicken cool and then slice it as well
  7. mix it all together
  8. salt & pepper to taste

The dressing:

lime juice and salt & pepper to taste
