Yesterday at work was another one of those days where it was nothing but work out at the new homes under construction.

Usually when I do these, I do 2-3 in a day. Yesterday I did seven! Last week I also had a day where I did 8, which is about the max I can do in a day without feeling completely dead afterwards. It’s a lot of walking back and forth with a heavy backpack on, which can be very exhausting.

On top of that, it was another hot day, so that just added to things 🤪

When I got home, I was tired and didn’t really feel like cooking, but I whipped up some bacon wrapped jalapeños.

I like to put spices in the cream cheese, which yesterday was garlic powder, cumin, and onion powder.

Each chili got one slice of bacon. I always wrap it good and tight and stretch the bacon. It always irritates me when people put a toothpick to “hold it together”. NO! The bacon shrinks when you cook it and it also sticks to itself so it is totally unnecessary to do that. Just put a toothpick after it’s cooked if you’re being fancy and don’t want to dirty your fingers...

I put them in a 350°F oven for about 20 minutes, then cranked it up to about 420° for another 5-7 minutes to crisp up the bacon. After that, pull them out and let them sit and rest a while and cool down a bit, and enjoy!

Until next time...

It’s easy, I just don’t like to make it very often because I get burnt out on them easily lol
