Our Local Dish Kinilaw
Hello steemit friends , today I wanna share to you my favorite dish Kinilaw, its local dish in Northern Mindanao in the Philippines, actually theres a lot of ways to prepare it, specially now a days if you go to the restaurant and order it they prepare it in different way. But my kinilaw that I will show to you is prepared in locally style, its more taste and we will used local spices.
Here are the ingredients
Vinegar, here we use "Tuba" its a native coconut vinegar
Tabontabon, Kalamansi, Suha, Peper, Onion, Ginger, Cucumber and Salt
How to prepare it :
First you have to wash the fish meat with the tuba vinegar and drain it.
Then put it in the bowl
Chop the spices like Onion, Ginger , Cucumber and mix it on the bowl.
Chop the Tabon=tabon in half and grind the meat, just use half of tabon-tabon.
Then put it in separate bowl add tuba vinegar on it, about one glass of tuba and mix it.
Use stainer to separate the tuba from the tabon tabon meat and squeeze it to extract the juice of tabon tabon and mix to the tuba vinegar.
When add the tuba with the extract juice of the tabon tabon to the bowl with fish meat with the spices.
Mix it well
Add salt, Peper to make it spicy, kalamansi juice, and the last one is the Suha.
Mix it well and there you go, Its all done, We made a very delicious Kinilaw!!!
