The variety of Ice cream flavors and extras gives it the best chance for everyone to enjoy.
You don't like peanuts? Get Sprinkles. You don't like Vanilla? Get Chocolate fudge. Ben and Jerrys alone list over 100 flavors that you can choose from. With another 4 dozen types of toppings to satisfy your cravings.
Price -
I believe it wouldn't be in error to say Ice Cream dominates the market in budget-friendly and quick desserts. Coldstones, Dairy Queen, & Baskin Robbins just to name a few dessert-only restaurants. This is simply because its cheaper to make and cheap overhead when selling.
Added Value-
Many people use Ice Cream as an Addition. Name 5 other desserts (Pie, Donuts, Cake, Brownie, and Cookies and notice how they are commonly paired with Ice cream. Matter of fact name a few food products (Pancakes, Bacon, and Fries) and notice how many other products can match well also.

Spring- In a Waffle Dipped cone with fresh fruit on top
