Christmas Pudding Fudge
600gm Milk Chocolate
1 Tin of Condensed Milk
2 and a half cups of Dried Fruit
Plus 100gm Diced Glacé Cherries
Milk Chocolate Melts for decorating
White Chocolate Melts for decorating
Red & Green M&Ms for decorating
120ml Dark Rum for soaking
Soak Cherries & Fruit in Dark Rum for a week (stir/shake daily so most of the rum is absorb)
Melt chocolate and condensed milk in slow cooker on high stirring regularly
Once melted add soaked fruit and any remaining Rum in the container and mix really well
Cook using the 2 Crust method
Stir until fudge appears as smooth as possible (the fruity will make it lumpy), and pour into a tray/mould to set overnight in the fridge
Cut set fudge into pieces and roll into balls
Place on baking paper and flatten out to give pudding shape
Place into freezer to harden the shape for 2 hours
Melt milk choc melts and dip puddings in chocolate. Return to tray and set in the fridge or freezer for an hour or so
Melt white choc melts and drizzle on top of frozen puddings to give appearance of custard
Slice green M&Ms in half and place on top of pudding with 1 red M&M before white choc fully sets
Return to fridge to harden
