Spaghetti aglio, olio e peperoncino
Today I would like to introduce you to a fast delicious dish
ingredients
500 g spaghetti (durum wheat)
1 tomato (s)
5 cloves of garlic
2 hot peppers
5 tablespoons of parsley
2 teaspoons vegetable broth (delicacies broth)
100 ml of olive oil, native
40 g cheese, z. Grana Padano or Pecorino, 1 year ripeness (leave out for vegan) In a new post I will post a tutorial on how to make super delicious vegan parmesan yourself fast and easy
1 tsp basil
1 teaspoon oregano
1/2 tsp salt
preparation
Working time: approx. 10 min.
First cook the spaghetti according to the package instructions. Shortly before the end of the cooking time you need 2 trowels of cooking water, do not forget.
Chop the hard cheese with a grater. Cut the tomato into small cubes and place in a bowl. Then cut the garlic into small pieces, lightly salt, wait a moment and crush. The salt turns the garlic into a paste when crushed. These also in the bowl. Cut the basil, oregano, parsley, salt and hot pepper into small pieces and place in the bowl. Add the delicacy broth and the seasoning mixture is ready. Now add the 2 trowels of cooking water - be sure to use this water, because the noodles have given off a lot of starch during cooking, which we need. Stir well and infuse for 2 minutes. If the seasoning mixture tastes slightly over-salted, it's right.
Drain the noodles well and fry in a hot pan for a maximum of 1 minute. Now add the seasoning mixture, stir well and then add the grated hard cheese. This acts as a binder and the liquid seasoning mix now combines with the pasta.
Before serving, add the cold olive oil and mix. Not previously! The oil loses extreme taste and quality when heated. If you like, you can add some hard cheese on top (leave out for vegan)In a new post I will post a tutorial on how to make super delicious vegan parmesan yourself fast and easy.

I am Italian so by default I love spaghetti, but this one is very fast to cook and it is delicious and helps a lot in the flu season :)
