Delicious potato pancakes with Hungarian goulash
A quick dish for everyone!
1.HUNGARIAN GOULASH
Hungarian goulash is an aromatic and essential pork goulash seasoned with a large amount of ground paprika, with the addition of carrots, peppers and fried mushrooms.
📖COMPONENTS (6-8 SERVINGS)
- 1 kg of pork shoulder or ham
- 100 g of cooked or boiled bacon
- 1 large onion
- 2 medium carrots
- 1 pepper
- 2 tablespoons of oil
- 2 tablespoons of lard (or olive oil)
- 4 teaspoons ground sweet pepper
- 1 teaspoon of ground hot pepper
- 3 teaspoons of dried bear garlic (can be omitted)
- about 1 l of hot broth or broth
- 2 tablespoons of soy sauce
- 2 bay leaves
- 3 allspice
- 2 tablespoons tomato concentrate
- 200 g mushrooms
- 2 tablespoons of butter
- 2 tablespoons of flour
📖PREPARATION
- Cut meat into cubes approx. 1.5 cm. Bacon cut into small cubes. Peel onion and cut into cubes. Peel the carrot and cut into slices. Cut the peppers into cubes.
- In a wide pot warm up a tablespoon of olive oil, add bacon and onions, sprinkle it. Add a second tablespoon of olive oil, put carrots and peppers and stir frying for a few minutes.
- In the meantime, heat the lard (or olive oil) in a separate pan and fry the pieces of meat. Season with salt and pepper and transfer to a pot of vegetables. If we can, water one third of a glass of wine (red or white) and evaporate for a longer time.
- Add the contents of the pot with ground paprika and if we have bear garlic. Pour the hot broth (or broth) in an amount to cover the ingredients. Add the soy sauce, allspice and bay leaf, cover and simmer over low heat for about 1 and 1/2 hours, until the meat is tender. Finally, add the tomato paste and the gold-chopped mushrooms.
- Heat the butter well in the pan, add the flour and stir briefly stirring. Put into a pot, mix thoroughly and bring to a boil.
2.Potato Pancakes
📖COMPONENTS
- Hungarian guiash (which we did before)
- 1/2 kg of potatoes
- 1/2 a tablespoon of wheat flour
- 1/4 of onions
- 1 egg
- salt
- 5 tablespoons of vegetable oil for frying
- to be served: cream and parsley
📖PREPARATION
- Prepare and heat a portion of Hungarian goulash.
- Peel the potatoes and grate them with a small mesh. Leave them for about 5 minutes without mixing and then squeeze the juice in your hands. Pour the flour, finely grated onion, egg and two pinches of salt into the imprinted potatoes, mix.
- Heat the pan (average 20-22 cm), pour 3 tablespoons of oil. Put the whole potato mass on the hot oil and spread it to an even cake. Fry over medium heat for about 4 minutes to golden color, turn over, add the remaining 2 tablespoons of oil and repeat frying (about 3 minutes).
- Put on a plate, put hot stew and fold in half. On top, pour over thick cream and sprinkle with parsley.
