Kedigree: (n) A dish of Indian origin containing primarily rice, eggs, and fish.

Despite my best efforts, the Kale was wilting and needed eating up. So I had to cook an entire bouquet at once.

What were my best efforts? Well, I thought I might try treating Kale like a bunch of flowers. Cut the stalk bottoms and set in a vase...

Alas, I could not also put them in the fridge after doing this, so they had to stay out in the Aussie Summer Heat. They did last four days, so that has to be something.

I need a short, squat vase for refrigerating Kale.

Kale is not that great on it's own, so I threw in a bunch of other flavours and got to play with the newer, bigger, food processor, too!

Implements
  • 1 large electric frying pan
  • 1 spatula
  • 1 food processor with a thin slicer blade
  • 1 means of beating eggs
Ingredients
  • 250g butter[1]
  • 6 eggs
  • 1 bouquet of Kale
  • Roughly three large carrots[2]
  • Half a block of Philly cheese (or equivalent melty cheese of your choice)
  • 1 large can of salmon (those of you who prefer it fresh can steam a portion beforehand)
Method
  • Chop your Kale so it can fit in the food processor, and top and tail your carrots (Also get rid of any browned or nasty bits)

  • Slice thinly with your food processor

  • Melt your butter, then your cream cheese in the frypan on low heat

  • Add your kale and carrots, stir in until coated

  • Add the salmon and stir in, breaking up as necessary

  • Beat the eggs

  • Add into the mix and stir slowly. You can let it 'sit' for a minute or two, but we don't want an omelette.

  • Garnish with ground sea salt and avocado oil when serving.

The Family Verdict:

Hubby: Om nom nom (had seconds)
Me: Lovely and flavourful, and the carrots satisfy my 'crunch' cravings
K: It was okay
T: Scoffed the lot

In the unlikely event that you actually have leftovers of this (follow the pattern, not the amounts) I wouldn't recommend freezing them. The kale and the carrots would suffer from freezing.

[1] In light of my last cooking post, I decided not to say '1 stick'
[2] We're using 'ugly' food because it's cheaper. Seriously, there is literally nothing wrong with juicing carrots. Just... store them outside of their plastic bag.
