Everything* Omelette
The asterisk is for (*everything you need for a day) which is harder to wrap the tongue around and less catchy.
Instruments:
- Food processor(s)
- Frying pan with lid
- Spatula
- Salt and pepper grinders
Ingredients:
- 2 eggs per person (I made a 4-egg omelette that K shared with T) - for protein and healthy fats
- 1 leaf of kale - for iron and fibre
- 1 sheet of Nori - for iodine
- 1 rasher of bacon - for protein and healthy fats
- 1 small carrot - for nutrients and vitamins
- 4 tomatoes - for nutrients and vitamins
- 1 handful of shredded mozzarella - for more healthy fats
- A decent amount of frying fats (we used organic Ghee)
- salt and pepper to taste (for salts and flavour)
Method
- Process your kale and nori into fine pieces first. I made that mistake and had to rearrange everything.
- Then process the tomatoes and your carrot
- The result should be a nice, salsa-looking mess
- Chop your bacon into bite-sized pieces
- melt your fats in the pan
- fry up your bacon to the desired finishing point (turn it onto high heat if you're in a hurry)
- Add the "salsa" and stir it in, turning down to medium heat
- Beat your eggs
- Add the eggs to the frypan
- Add salt and pepper to taste
- Add shredded mozzarella
- Cover and allow to cook for a minute or two, until the cheese is melted and the egg is cooked.
Fold and pack for a breakfast far away from home.
T and K split the one I made with four eggs for their lunch-boxes, so you might want to check your portions. I did make the mistake of doubling the contents for one I made today... and the omelette was very crumbly. Depends what you like, I guess.
