Every now and again you get the craving for something crunchy. Usually when I'm not feeling too hot, I'll dive for the packet of chips. But since I'm staying lo-carb, that was not an option. BUT, we had some Celeriac[1], and Hubby had a brand new super-sized food processor:

Alas, it wouldn't do fries[2] but it did have a wavy-pattern chipper wheel so we said "what the heck" and made a dinner of veggie chips

Instruments

  • 1 food processor with a chipper wheel
  • 1 deep-fryer
  • A load of paper towels

Ingredients

  • 2 Celeriac

  • 2 large carrots
  • Coconut oil for your deep fryer
  • Ground sea-salt to taste

Method

  • Peel your veggies

  • Run them through the processor

  • Deep fry in small lots (or else the thing will overflow)

    Some poking-down may be necessary, as celeriac floats
  • Turn out onto paper towels

  • Salt generously and shake it through

The celeriac has a vinegar-like after-taste that I was the only one to like. Everyone else preferred the sweetness of the carrot chips. They also get soggy very quickly, so if you must store them, store with one of those silicone dehydrator packets.

[1] Celery root to the uneducated in these things. It's THE lo-carb potato substitute. Assuming you can find any.
[2] Which we also call "chips" in Australia. We're a confusing bunch.

Hmm, maybe we need to get a deep fryer... Have you tried daikon radish as a lo-carb potato substitute? I don't care for the radishy taste much myself, but I sometimes do it a roast veg, or put into @sift666's breakfast mince (which is cooked up in the crockpot).

I may have daikon radish and not know it yet. I'm still learning about all these lovely organic veggies. Either that, or it's not allowed in Australia for reasons. I'll keep an eye out for it, though.

Its not very common here either, but our organic shop has it sometimes.
