Tried my hand at gimbap for the first time

Tonight I tried my hand at gimbap for the first time. As if rolling and cutting isn't nerve racking enough, I made it with cauliflower rice! I can't eat rice due to medical issues. I was going to make Maangchi's danmuji, but didn't have gardenia pods or rice bran. Not yet anyway! I made an Indian fusion daikon pickle with Asafoetida and turmeric, loosely based on the spice mix for mango quick pickle. The result is not exactly pretty, but it is yummy: spicy tuna sald, daikon fusion pickle, cucumber kimchee, and sesame seeds, and cauliflower rice. It rolled well, but tore when cutting. I think the roll was too wet.
