I love going to these Chinese lamb restaurants. I don't understand why so many Korean people don't like lamb. It tastes so good. Great write up.
They are great places. I try to go to the ones owned by Chinese Koreans and it is always fun to find a favorite in a new neighbourhood.
I think Koreans simply aren't used to eating lamb because of historical reasons. A general lack of meat until the 1980s and no strong influence from a region where lamb is popular until the last decade or so when the Chinese Koreans started immigrating en masse. Kinda weird though because sheep would live wandering around all the hills.
