Dandelion Whole Wheat Bread

Our dandelions started showing their beautiful faces today. This year I'm taking full advantage of sharing the acres of yellow with the birds and the bees.
Today I decided to throw together a bread with some dandelions in it.

I took my usual recipe for whole wheat bread and threw some dandelions in it.
Below is the recipe. Please be aware that I use those old white cups that every old person's house had in it for measuring, not actual measuring cups.
So if you want to replicate it, the cups should be a bit heaping if you're using regular measuring cups.

1 Tablespoon yeast
1 Teaspoon salt
1 Tablespoon sugar
1 Heaping Tablespoon Lard
1/2 Cup ancient grain mix (or any kind of grain - flax, oatmeal, etc.)
2 1/2 Cups whole wheat flour
1 Handful dandelions
1 Cup water

Mix together water which should be warm, sugar and yeast. If it foams after a few minutes, it's active.

Cut the ends off the dandelions, unless you want to put the whole head in, in which case feel free.

Mix in salt, dandelions, ancient grain mix into sugar/yeast mixture. Mix in 2 cups of flour, knead the dough.

Gradually add the last 1/2 cup until it's not sticking to absolutely everything. You may not need the whole 1/2 or you may need more. Go as it feels good.

Let rise till doubled in size, punch down and put into pans.

Bake at 350 for about 25 minutes or until nice golden brown on the top.

Serve with butter. :)
