Keto Seed Bread

Anyone who has followed me long enough knows I eat Keto. I have posted some Keto recipes in the past but I haven't posted any in a few months so I am going to throw this one out there!
I have been struggling to try and find a good 'bread' recipe that I liked, well I found one!! Actually, it's more like a cracker but tastes great with peanut butter, a spinach & artichoke dip, and I imagine it would taste amazing with honey too!
Keto Seed Bread, it is a very dense and hearty bread. Thinly cut slices and toasted to a golden brown are key!!

Makes two loaves.

Preheat oven to 350 degrees and line your loaf pans with parchment paper.

3 cups raw pumpkin seeds, divided 1c & 2c
2 cups sunflower seeds
1 cup psyllium husks
1 cup chia seeds
1 cup flax seeds
2 tsp salt
1-2 tsp sweetener of your choice or 1 tbsp of sugar-free maple syrup
3 cups warm water
6 tbsp melted coconut oil

Pulse 2 cups pumpkins seeds in the ninja/nutribullet/blender until a near flour consistency.

Mix, in a large bowl all the seeds, psyllium husks, salt and sweetener with the pumpkin seed flour. Add the coconut oil and warm water. Mix well.

Firmly pack the batter into the loaf pans and bake for 45mins.

Line a cookie sheet with parchment paper. After the 45mins bake time remove the loaf pans, flip on to the lined cookie sheet, remove the loaf pans and continue to bake for another 15mins.

Allow to completely cool before slicing.

Store in an airtight container/bag in the fridge for up to 7 days and up to 6 months in the freezer.

Per slice: 6g Fat, 8g Fiber, 7g Protein and 2g Net Carbs.

Still strong on the keto? That's great! Me too! I have been on it since September last year. I took a two week break at Christmas. I lost 60 pounds total last year. This year I have been holding steady so far, but I would like to lose about 20-30 pounds more. I have started doing some mild excersise to help speed that along. I have some injuries that made excersise all but impossible before I started, but now that I have lost so much I can actually accomplish some things! Anyway, I'll try out that bread! I am still on the search for a satisfying recipe too!

Still doing Keto, just lazy keto though. I haven't really lost weight but I because I smoke I probably just eat too much, LOL! Keto has made me healthier though in many ways, I feel it.
KNOW brand has a really good bread and a few other things but they only ship within the states, I used re-ship but holy fuck that price was ridiculous... never again!

Wow that hearty! I would have to grind all the small seeds up though. They cause hubby pain, mecals diverticulum. A pocket I the intestine that gets infected easily by small stuff, seeds.

Nope, just preventative stuff.
He has already had part of his intestine removed.
