Keto Friendly Fried Rice Recipe

One of the first recipe I learned when I started doing Keto. Being Thai, I had to find a way to replace my rice with something. And anding Miracle Rice was it. I was able to incorporate it into a lot of my dishes.

INGREDIENTS
3 Cloves of Garlic
Pinch of Pepper
Pinch of Salt
1 TableSpoon Soy Sauce
1 Tablespoon Vinegar
Handfull cut mushrooms
Handfull of bean sprouts
1 tablespoon red onions

INSTRUCTIONS
Step 1.
Open up one package of Miracle Rice and rinse it with water to give it a good wash.
Step 2.
Use 2 whole eggs and add a pinch of pepper and salt to give it some taste. Now give it a good whisk.
Step 3.
Cut 3 cloves of garlic and about 1 tablespoon full of green onion.
Step 4.
Cut up about 3 oz of chicken thighs. ( you can add more if you would like )
Step 5.
Fire up your cooking pan and I used 1 tablespoon of coconut oil.
Step 6.
Drop in your eggs you whisked earlier and cook it like who you would make scrambled eggs. Once done, save it for later use.
Step 7.
Add another 1 tablespoon of coconut oil.
Step 8.
Add 1½ tablespoon of red onion, and add your garlic to the oil.
Step 9.
Add your chicken. Cook the chicken first before adding in the rest of the ingredients.
Step 10.
Add a handful of cut mushrooms and bean sprouts
Step 11.
Add your Miracle rice to the pan. Mix it in really good.
Step 12.
Add 1 tablespoon of soy sauce and 1 tablespoon of vinegar.
Step 13.
Add your cooked eggs back into the pan.
Step 14.
Give it a good stir all around until you see your rice changing colors. And you’ll have one great tasty low carb chicken fried rice.
