As a mother who works fulltime and (mostly) dedicated to the low carb/keto life style, finding time to include delicious, easy to prepare meals that can please the whole family is a challenge.

I really recommend using a cooling rack on the baking sheet to ensure the chicken strips crisp up, as well as turning halfway through the cooking time.
A variation that we enjoy is marinating the chicken all day and then coating with just parmesean cheese (omitting the seasoning).
Serve with a side salad or other low-carb veggies; or home-made mac and cheese for those not following low carb.

It really is easy!
I often prefer to brine my chicken before preparing, but with this recipe, I've found it unnecessary - the parmesean and seasonings stand alone in adding flavor/salt, and not over-cooking keeps them tender.
