Potal Bhaji is a popular and simple dish that is unique in taste and quite easy to prepare. Patal Bhaji is usually eaten with rice and is a familiar dish in any Bengali household. It does not require much ingredients to cook, and can be prepared in less time.
First wash the pot well.You can squeeze the potato peel lightly, or you can leave some. After that, the potals should be cut lengthwise into two or four parts. Rub the turmeric powder, salt and pepper powder well with the potal and keep it for 5-10 minutes.This will allow the spices to penetrate well inside the pot and the taste will be better after cooking.
Heat mustard oil in a pan.When the oil is hot, add a pot and stir it well. Keep frying on medium flame so that the potal gets cooked and fried well. Stir occasionally so that the potal does not burn.
Adding spices to enhance the taste
When the potal is lightly fried stir in cumin powder, sugar and chaat masala. This will enhance the taste. When the potal is nicely fried and light brown in color, switch off the gas. Serve with hot rice.
If you want to use less oil while frying potal you can use a non-stick pan.You can fry the potal with onions and garlic for a slightly different taste. Those who like spicy, can use green chilies more red chili powder. If want little crispy potal you can fry it on high heat, but you have to stir it frequently so that it doesnt burn.
