Autumnal Equinox with the Harvest Moon - Celebrating the Abundance...

Today is the Autumnal Equinox here in the northern hemisphere and this weekend is the Full Moon (Harvest Moon).

It always amazes me the abundance of the land available for all that can see it.

I have been busy putting stuff up for the long winter months and I'm very grateful to have a full pantry -

Pantry Full of Preserves

We have been busy making bone broths and soup stocks plus canning beans and garlic, chokecherry juice and pickles.

Harvest Bought in to the Root Cellar

Our root cellar is full and keeps the food well into spring. Our freezer is getting pretty full and I'll soon be getting the Dehydrator going full time creating our favorite -

Kale chips

Ingredients:

large bunch of kale leaves - stems removed
melted coconut oil
sea salt

Directions

Make sure you have removed the thicker stems off the kale leaves and they are washed and dried. Place them in a large bowl and pour the melted coconut oil over them, just enough to lightly coat them. Massage the coconut oil into the leaves and sprinkle with sea salt. Massage the leaves again to spread the salt around evenly.
Place leaves on the dehydrator racks, spacing them out so the leaves are not touching.
Dehydrate at 135 Fahrenheit or 57 Celsius for 2 hours or for Raw food dehydrate at 108 Fahrenheit or 42 Celsius for 4 hours.
*Note: These can be made in the oven at 350F/180C for 10 to 15 minutes or on the lowest heat setting of your oven for 40 to 90 minutes.

I wish I had a pantry like that!

It's pretty handy to have a walk in pantry, my husbands creation same as the root cellar was his creation - I just helped build it.

Someone attempted to do that with our house before we owned it. They cut main support beams and used plywood for a box that disintegrated . The floor was sagging about 6 inches. We jacked the floor and used extra poles/beams to share the weight.

Yikes! Obviously someone didn't know much about carpentry - cutting the main support beam! Our pantry was part of an addition that we added on and my husband use to use it for his little work space in the house. But being a generous man and seeing how it could be a much better use of space as a pantry he moved his stuff out and put some selves in and indeed it is a well used area. I am so grateful we have it.

We too have been canning a lot as well. Recently, canning grape juice and some meats. We had all kinds of Kale this year, but it seems like it was eaten as fast as it was coming in. Haha! Great Job!

M-m-m grape juice! A lot of these jars are full of nutritious bone broth. How do you eat your kale? I like it best as chips and young in salads, also potato kale soup.
