tangy dill relish - enjoying the summer harvest in winter

i finished off the last of my cucumber dill relish this morning with breakfast. there was a slight feeling of sadness with each bite, but i've got 13 other jars of different pickled goodness in the fridge to go after. this was just my favourite

i used basic cucumbers, onions & red + green bell peppers. i followed this basic recipe here, but added more mustard seed and dill seed. i used the recommended amount of turmeric, but mine doesn't have nearly as much of the yellow hue as the online recipe.

i want to try different relishes this summer. removing the seeds from the cucumbers and chopping everything so small was time consuming, and i'm not a big fan of using the food processor for dicing. i've made sliced green zucchini pickles before, so i wonder how they'd hold up to chopping, or if they'd turn to mush.

ideas? suggestions? i'd love to hear from you!

thanks, i am excited to share them! i've got about 10 different canning & pickling books to browse thru (without a lot of repeats, surprisingly!) so that ought to keep me busy.
