More food from the garden you may not know about.
Very simple Courgette/Zucchini Flower and Garlic Omelette Recipe.
Everybody who gardens and even those who do not, surely knows how delicious and versatile a fruit the Courgette/Zucchini is. But many may not know that you can also eat the flowers. Provided you get them when they are young as once they have bloomed they quickly degenerate into slimy brown mush.
When picking them you will also want to check for insects hiding inside. Particularly ants and earwigs. Unless of course you are looking for some extra protein in your diet. :)

There are two sorts of flower: the flower with the immature vegetable attached is the female and the flower on the long stalk is the male. Both are just as good as each other to eat.
You can consume the flowers raw but they are quite plain in flavour so it is better to cook them into something.
Looking online you will find an abundance of recipes from flowers stuffed with herbs and cheese and fried briefly, dipped in light batter and deep fried or added to risotto or stirfries.

A favourite of ours is nice and simple. Roughly chop the flowers and a few cloves of garlic.

Season two eggs in a bowl with salt, black pepper and cayenne pepper.
Whisk with a fork then add the flowers and garlic. Mix well and then add to a hot oiled frying pan or skillet.

One tip for cooking omelettes is to start with a hot pan and then turn the heat down once the mix is in. Cooking slowly will ensure the omelette cooks evenly and doesn't burn.
Once the top side had congealed with the heat you can flip it and cook for a few more minutes.

Then serve and enjoy. We had ours with slices of cucumber and a good pouring of our homemade mayonnaise.
