Some great tips here on how to season and use a carbon steel wok - a truly underused item in the kitchen! I see a lot of 'non-stick' woks advertised and it makes me cringe because anything non-stick shouldn't be used on high heat and yet woks are mostly used for high-heat cooking...

Looking forward to the fried chicken for next time :D

No kidding right? @phamished! If the word ever got out, it would destroy 3/4 of the cookware industry. The sensationalism that people fall for is criminal. Real life tools in commercial kitchens are rough use, tough pieces! Some nonstick there, but like you point out, not for high heat. Keep on wokin':)
