How to Cook Ampalaya with Egg

Both the families of my parents have a history of being diabetic and have been the cause of death to some of my relatives.
So since I’m still young, I want to maintain a healthy lifestyle to prevent future diseases. So for my breakfast, I will be cooking Ampalaya with egg.

TRIVIA:

Did you know that the English for "Ampalaya" is Bitter gourd and they are from the Momordica genus of the climbing vines? Ampalaya has many health benefits and is commonly known to lower blood sugar levels that's why it is highly recommended for diabetic persons.

Ampalaya also contains Vitamins A, B, C, Iron, Folic Acid, Phosphorus, and Calcium. Also, taking 1 glass of Ampalaya Juice every day can help remove Diabetes, Cough, Colds, Ringworms and Regulate Bowel Movement.

Ingredients:

  • 1 big size Ampalaya
  • 2 pcs. egg, beaten
  • 3 cloves garlic, crushed and minced
  • 1 medium size onion, chopped
  • Maggi Magic Sarap
  • Salt and pepper
  • Vegetable oil

Directions

Before starting anything, cut first the Ampalaya in half, deseed it then sliced crosswise. Afterwards, soak the sliced Ampalaya in salt water for up to 10 minutes to reduce its bitterness and then rinse properly.

In a frying pan, sauté the garlic and onion.

Add Ampalaya and stir it for 3-5 minutes or until Ampalaya is just cooked. Do not overcook the Ampalaya to maintain its nutrients.

Add the egg and stir it until the egg starts to solidify.

Sprinkle a little of Maggi Magic Sarap and season it with salt and pepper to taste then remove from pan.

Serve with rice and enjoy. ^_^
