Thai Kang Kob Pumpkin and VEGAN COCONUT CURRY RECIPE!
Thai Kang Kob Pumpkin!! It's that time of year!! This is by far one of our favorite pumpkins here at Kindred Acres. Our Thai Kang Kobs are just about ready to harvest this year. I decided to post our recipe and pics from last year for reference and to share this delicious recipe. We really loved it! The one in this picture was perfectly ripe and oooh so delicious! Kaliah actually could not stop eating the raw cubes! This pumpkin is delicious raw.....But we also made a nice large crockpot of vegan coconut curry soup with it.
This one weighed just shy of 8 lbs. We didn't use all of it in the curry so I cubed up the rest and froze it for later use.
Here is my recipe for the curry....I made it up myself so if you try it, let me know what you think! :) We love it so much we are entering it into the #fruitsandveggiesmonday contest run by @lenasveganliving and @plantstoplanks!! Wish us luck!! ;)
2 cans of organic coconut milk
1 can of organic cannellini white kidney beans
1 big handful cilantro chopped up
1 sweet bell pepper diced
1 sweet onion diced
2 large carrots sliced
about 1/3 of the Thai Kang Kob pumpkin
2-3 cloves of garlic
a little lemon grass (optional)
2 teaspoons red curry paste
pinch of ginger
pinch of salt
1 teaspoon curry powder (I like a strong curry flavor)
the juice of 1 fresh lime
Cook in a crockpot on high until pumpkin is soft.

I don't think I had any idea how many different varieties of pumpkins and squashes are out there until recently! Though I probably will never come across even a small fraction of them. I love that you can eat this one raw and cooked! I just made some acorn squash from our garden into a slow cooker soup yesterday, as well. Always hits the spot! I can't wait until it really stays cool enough here to enjoy soups even more. :)
We focus on rare and unique fruits and veggies here at Kindred Acres so we tend to grow some really unique stuff. This one happens to be one of my own personal favorites. I'm actually in the process of breeding our very own variety. It's a process but once it is stabilized it will be available on our shop. This squash will be edible raw, will be sweet, easy to grow, prolific, and very resistant. :) Very exciting stuff! :)
I love that! There are a few local farms that come to the farmers market who try to grow heirloom and unique varieties. It's awesome to be able to find things that you can't get at the grocery store. I try to save seeds from items that I really enjoyed to see if we can get them to grow in our own little garden. :)
That's awesome to hear that farmers markets are honoring heirloom varieties! I love that. I seek out the heirlooms, the endangered, and the forgotten. I love it! Gives it new life by spreading the word about them.

Looks like such a fleshy pumpkin and good to know it tastes great raw! That was quite a recipe you came up with - VEGAN COCONUT CURRY! I've made the curried pumpkin soup before but this has a whole lot more going on with it - looks totally delicious and nutritious! Thanks for sharing!
Thanks!! Yes it is very meaty and such depth of flavors. Totally something I recommend everyone try. I won't be without them ever again. They will be in my garden every year.

It truly was. We have about 6 pumpkins out on the vine that are oh so close. Any day now and I'll be making another crock of this soup. Yum. Just in time for the cool down. The nights have been nice and cool. I'm loving it.
I love Pumpkins too but didnt haven't grown any yet so hoping next year to get some.in the ground

They do sprawl pretty good so be prepared to have the space but they are so worth growing. This is one of my own personal favorites.

What a knobbly pumpkin!!!! I love a good pumpkin curry. I've been roasting mine BEFORE I add it to the curry which adds a whole other dimension!!
PS Did you know you can use 10 tags, making the most of post rewards? As this is a healthy recipe, you can use #naturalmedicine for this too! I use Steempeak, as it allows 10 tags - sometimes I only get to 8 though, as I run out of imagination haha!
I'll have to try roasting it first!! That's a great idea to add another layer of flavor! As for the tags, it only allows me 5. Maybe because I'm new? But I'll certainly add #naturalmedicine to a tag on a post that is fitting! Thanks for the tip! :)
