For the past few months I have been making my own herbal tea using herbs from my garden. I am addicted to the sweetness from the mint, lemon balm and marjoram. I even use catnip and chamomile in some of my herbal blends.

The only problem was I always wanted a little more sweetness to the tea. I don't drink tea hot or warm, I prefer cold sweet tea. So when making my daily herb tea the night before drinking it, I always added about an eighth of a cup of sugar but it just didn't taste perfect. The eighth of a cup of sugar was enough for 64-ounces of sweet tea. Not over-powering but enough to satisfy my ferocious sweet tooth.

So I made up mint and sage simple syrups earlier today and will be using when I make my herbal tea tonight. I will use the simple syrup sparingly in the beginning because it does tend to be much sweeter than just adding regular granulated sugar.

Simple Syrup Basic Recipe

8 ounces or 1-cup of water
8 ounces or 1-cup of sugar

Put into a saucepan and, using low to medium heat, cook (while continuously stirring) the mixture until the sugar dissolves completely.

Herb Simple Syrup

Use the basic simple syrup recipe, but add in anywhere from 1/8-1/2 cup of favorite herb; depending on your preference of flavor strength.

When the sugar has dissolved, let it sit at room temperature for about 30 minutes until cool, then pour through cheesecloth into your container.

Will store in refrigerator for about two weeks

you could even fill the syrup into bottles while it is still hot and then it keeps without cooling :-) Have you considered to grow Stevia in your garden and then just add a leaf or two to the tea?
