I am going to be sharing with you the recipe of my favourite local dish called 'EKPANGKUKWO'.
Wow, hope i didn't frighten you? I could do a little bit of helping with the pronunciation, you could try it this way..eh - pang- ku- quo.
Okay...
This meal is a very, when i say special i mean really very special delicacy to the Akwa Ibomites and crossrivarians all in Nigeria. It is delicious and filling mostly used to welcome guest and on special occasions, such as traditional marriages...
∆ Lets get our ingredients right ∆
You would be needing the following ingredients to prepare your ekpangkukwo delicacy. They are sold and could be bought from the local markets...
• Cocoyam [2 medium sized tubers]
• Water yam [1 sized tuber]
• Dry fish [A handful]
• Crayfish [As you like it]
• Fresh pepper [As you like it]
• Seasoning cubes [2 cubes]
• Fresh Vegetables [Enough to wrap]
• Shelled perewinkle [As you like it]
• Palm oil [3 cooking spoonfuls]
• Salt to taste [Half tea spoon]
• Onions [One big size]
PS:- This demo is for a serving.

∆WAY TO GO∆
This part is about the preparation.
• Peel your cocoyam and water yam wash and grate in a fine paste. Keep aside.

• Get your unshelled perewinkle, cut the top and edge, wash thoroughly and steam in salt water(just so it doesnt taste so ordinary)
• Prepare your dry fish, removing bone.
• Blend/ pound your fresh pepper.
• Blend/ pound your crayfish.
• Peel and cut your onions, set aside.
• Now prepare your veggies, by plucking and washing.
• Get your cooking pot, pour your palm oil into it , this is to avoid the mixture sticking to the edge of the pot and getting burnt.
• Now get the grated cocoyam & wateryam mix paste, pick the vegetable per leaf, cut a small portion of the mix in it and wrap round to cover.
• Put into your oil greased pot, wrap wrap and wrap till the mixture is finished.
• Put all your ingredients into the pot now; pepper, crayfish, seasoning cubes, fish.
• Set a kettle of water on fire to be pour into the pot mixture, this is to prevent the wrapped up paste from scattering out.
• When your water is boiled, set the pot on fire and pour the hot water into the pot above the mixture.
• Cover firmly, and allow to steam for 8 minutes.
• Open up and use a knife to slit through, add salt to taste, cover for 5 minutes to cook well.
• Add your chopped onions.
• Stir with a wooden turner.
• Ta- dah your meal is ready !!
