Mexican Chicken Lime Soup

Dear Friends,
Today I am here to share a recipe for those who are health-conscious. Mexican chicken lime soup- This is a healthy soup full of protein, including nutrients. Many people, exceptionally those striving to, exist a healthful lifestyle, will have it year-round. Friends since July 2020, I started posting my recipe. Please share your feedback through comments. It will help me to understand your thoughts and also help to improve myself. I always try to share different delicacies with you. I also would like to thank all who supported me during this time. So, let's start making a healthy Mexican chicken lime soup.

Ingredients:-

1.Boneless chicken breasts- 850g
2.Yellow onion- 1medium(diced).
3.Green onion-1-1/2 cups(minced includes white portions).
4.Garlic cloves- 5-6(minced).
5.Chicken broth- 9cups(low sodium).
6.Chicken stock-2cups.
7.Jalapenos- 2(seeded n minced).
8.Roma tomatoes- 2(seeded n diced).
9.Cumin-1tsp(grounded).
10.Oregano- 2tsp.
11.Fresh lime juice-3tbsp.
12.Celery- 1/4bunch(chopped).
13.Cilantro leaves- 1/3(chopped).
14.Black pepper powder- 2tsp.
15.Salt- To taste.
16.Avocados- 3 medium(cored & diced).
17.Olive Oil- 3tbsp.
18.Tortilla Chips- as per your choice(optional).

Preparation Method:-

Step 1- First, place a wok on medium flame. Add olive oil then, add onions, celery, jalapenos and saute until tender. Next, add garlic and again saute until the raw aroma goes away.

Step 2- Now, add chicken broth, cumin, salt, tomatoes, black pepper, and chicken breasts. Reduce the flame medium-low, cover the wok with a lid.

Step 3- Stir occasionally, cook for 15-20minutes, or until chicken breast; is cooked well.

Step 4- Once the chicken is cook, take out the chicken piece from the wok. Place the chicken pieces on the chopping board. Now, shred the chicken and return them to the wok.

Step 5- Now, add chicken stock, oregano, lime juice and again cook for 10minutes. Check salt and spice at this stage; if required, adjust at this stage.

Step 6- Next, add cilantro leaves and mix well. Turn off the flame. Transfer the soup into a serving bowl.

Step 7- Garnish Mexican chicken soup with avocado. Now it's ready to serve with tortilla chips.
