Eggplant Pakora Recipe is famous in Pakistan and India Mostly. Baingan ke Pakoray or Baingan Pakora recipe is sell in the street in other words is a street food recipe. Baingan recipe pakistani also use Eggplant for baingan ki sabzi, baingan ka bharta recipe, baingan ka salan and baingan ka bharta pakistani.

Ingredients
1 medium-sized Brinjal
400g Gram Flour (Besan)
½ tbsp Turmeric Powder (Haldi)
½ tbsp Salt
½ Crushed Chilies
1 tbsp Whole Coriander Seeds
1 tsp Red chilli powder
1/2 tsp Cumin Powder

Method:

  1. Wash the Brinjal thoroughly and cut in to thin slices about half a cm thick – there is no need to peel the Brinjal, but you can if you want to
  2. In a separate bowl, add the gram flour with the turmeric powder, salt, crushed chillies and coriander seeds, Red Chilli
  3. Add enough water to get a batter of thick paste-like consistency – the batter should not run off the spoon
  4. Add the sliced Brinjal into the mixture and mix
  5. Heat up oil in a frying pan
  6. Add the sliced potatoes into the heated oil and fry for a few minutes until golden brown on one side and then flip
  7. When both sides are golden brown then remove from the frying pan and let the oil drain away
  8. Serve immediately with mint sauce and enjoy!
