Macadamia Nut Brittle, My Way

As promised, here is my recipe for Macadamia Nut Brittle. I sell out of it everytime I make it which is usually holidays.

Ingredients :

4 cups roasted and chopped Macadamia Nuts

2 1/2 cups Organic non bleached sugar

2/3 cups raw organic honey

2/3 cups of water

2 tsp Hawaiian Sea Salt

1 tsp baking soda

Directions:

  1. Preheat oven to 350 degrees

  2. Spread nuts on a baking tray and toast in oven until light golden, 4 to 6 minutes, turn after 3 minutes to ensure they toast evenly. Remove from oven and cool to room temperature.

  1. Put sugar in deep pot. Add the honey and water. Turn burner to medium, stir and bring to a boil.

Continue boiling without disturbing until a layer of bubbie form on top, 3 to 4 minutes.

Cover the pot with aluminum foil and place a wooden spoon on the foil to keep the foil down. Continue to boil undisturbed for 5 minutes longer.

  1. Remove the foil add butter and stir a few times with a wooden spoon.

When the butter melts and forms a soft ball, add your candy thermostat and continue cooking on medium heat untill it reaches 300 degrees for hard cracked and 275 for soft cracked. I do the soft cracked as most people like it a bit softer

While you are waiting, apx 10 minutes for the temperature to rise, oil you baking sheet lightly. I use organic Macadamia Nut Oil.

  1. As soon as the mixture reaches the desired temperature, turn off the burner and immediately and stir in the salt, baking soda and Macadamia Nuts.

Use a metal spatula to spread the nut mixture as evenly and thin over the prepared pan and let it cool to room temperature. It will harden quickly.

  1. After the brittle has cooled to room temperature and hardened,if you brittle is oily, you can run a clean dry towel over it to absorb some of the oil. You are now ready to either carefully cut or tap the brittle with a mallet and store in an airtight container. I'm leaving mine covered in foil until tomorrow and store it in small containers for individual sales at the market.

The rest of my day was spent doing my normal chores taking care of animals, plants and trees.
