My Actifit Report Card: May 2 2021 -. How I Make Macadamia Nut Butter

Have you ever eaten Macadamia But Butter? If not, you are missing a real treat. Macadamia Nuts have gone sky high just like everything else here on the Big Island. Fortunately, I have a friend that works on a Mcnut farm and she gives me a good price. The last time I got them from her, I traded her some Lilliko Butter.

It's was raining out today, so I decided to make a batch of Macadamia But Butter to sell at the Aloha Friday Market.

Here is the recipe I used:

6 cups chopped Macadamia Nuts

1/2 teaspoon sea salt

1/2 teaspoon cinnamon

3 teaspoons honey

Directions:

Place all ingredients in a food processor and mix on high until creamy a smooth.

I put mine in 4 oz jars and seal them in my pressure cooker.

I start out by heating up the water so I can sterilize bother the jars and the lids by dipping them in the boiling hot water

I then put the lids, rings, and jars in a clean towel to dry a bit

While the jars are drying out, I print and cut out my labels. I save all my label templets on avery.com which is a free service. You can either pay them to print your labels or print them out yourself.

I do round labels to fit on top of the lid and then laminate them and cut them out.

Next I fill my jars, leaving 1/2 inch space at the top. I make sure the rims of the jars are clean by wiping them with a damp paper towel. Any food on the rims will keep the jars from sealing.

Next, I place the lids on the jars ensuring the ring is on snug. And place them in the pressure cooker with enough water to cover the lids.

I set my pressure cooker on high and set the timer for 1 minute. The timer doesn't start until the water starts boiling and 1 minute is enough time to cause the lids to seal.

I make sure I release all the steam from the cooker before I take the lid off. I then use canning tongs to take the jars out of the cooker.

I place the hot jars back on the towel until they are cool. Once cooled, I ensure the lids have sealed, take the rings off and dry both the kids and rings before I put my labels on top of the lid and put the rings back on.

Now they are ready for the Market.

We are getting a lot more tourists now, so these should sell out quick.

I'll probably have to make more next week ☺️

Tuesday I plan to make Macadamia Nut Brownies and and Macadamia Nut Brittle.

Tomorrow is supply day so I will be driving to Hilo to the Hopeko store. That is if it's not pouring rain like it did today.
