Good evening my amicable women, I strongly believe that all of us are doing good in our various homes. I am very grateful to this wonderful community @steemwomenclub for their efforts and time spent to keep us active and their encouragement.
AFRICAN EDITAN SOUP
Editan leaf is one of the popular greenish leaf known and used and eat among the ibibios and efik people. This leaf have a slightly bitterness.
Editan leaf is used to cook editan soup, editan soup is one of the delicious tasty vegetable soup that is popular in Akwa Ibom state and Calabar. This is indeed a rich delicious and tasty soup that is made or prepared from a greenish leafy vegetable editan, water leaf and other healty ingredients.
INGREDIENTS
editan leaf(sliced)
water leaf (chopped)
Meat
dry fish 🐟
stock fish
seasoning cubes
cray fish (grinded)
Palm oil
periwinkle
fresh pepper
salt
HOW TO PREPARE TASTY EDITAN VEGETABLES SOUP
Here goes how the tasty editan soup is prepared,it is another delicious vegetable soup everyone and it is similar to how Afang soup ist prepared but the process a little different in taste; one important thing about editan soup, is that it is palatably sweet in such a way that one might confuse its taste with that of Afang soup ,I am very sure you will love to eat this soup and also appreciate me for this. Oh my home oh my sweet home! I am really enjoying my Mum and my siblings over here because we always love to prepare and eat Editan soup every week especially with Ekpan-Iwa (long cassava envelop) I am preparing this delicious tasty soup and I can teach anyone how to cook it.its not funny I mean it 😄😃!!!!!
This delicious soup is a very special soup its can be prepared either with okro or water leaves depending on which one someone want to use, they are both yummy yummy If one choose to use akro , there is no need to use water leave, you cannot use both.
One needs a lot of time to prepare this soup, because of the procedure that follows
The following are the pre- preparation one need to do before cooking the editan soup.
plucking and slicing the editan leaf
plucking , washing and chopping of the water leaf
Wash the periwinkles with salty water,wash it very well to remove all the dirt's.. - put it in a clean container and add water and salt
Wash cow skin, or beef,stock fish,dry fish warm salty water..
seasoning them with salt, seasoning cubes of your choice ,pepper and onion cook for 30 minutes
sliced the editan leaf into tiny pieces,put in a container boil water and pour into it, you can add salt or potash in that water to reduce the bitterness.
rinse its leaf twice to so that it will not bitter.
But some people like me love it to be bitter smallwash the water leaf and chopped it into tiny pieces
add the periwinkle into the pot containing the meat and stockfish and dry fish and stir for 20minutes
Add water leaf to the pot containing all the ingredients and stir for 10mins
put palm oil
Add editan leaf stir and cover the pot for 5mins
Oh no editan soup is ready.. - best eat with your favorite swallow fufu,garri or pounded yam, semovita, wheat etc.
Health benefits of editan leaf
Editan leaf is known as a medicinal leaf.
It is a fertility leaf ,it boost fertility,it helps a woman to conceive easily
editan leaf is very rich and a good source of alkaloid and also phenolic compound.
editan leaf could be used to treat or manage the disease called neurological disease
it is a strong excellent anti oxidants,
it helps to promote healthy weight,
it is a good source of vitamin A&C
,it is antidiabetic
It was delicious and I eat and leak my fingers.

With the steps and your description of editang soup, it looks delicious and simple to follow. I once tried it and I didn't really like it. I prefer afang to it. But I will give it another trial following your tutorial. Thank you for sharing

You make cooking look so easy! It also looks like you've truly enjoyed cooking the soup. Unfortunately some of the ingredients is not available in South Africa or I should rather say, not that I know of.
