Hello @steemwomenclub, I am Patience Akwash from the Middle Belt region of Nigeria, Nasarawa State to be precise and I reside in Akwanga town.
In Nasasrawa State of Nigeria, there are about 24 tribes and I am privileged to come from the Eggons. Every tribe has its traditional delicacy and Eggon as a tribe is not left behind.
We have different traditional foods in my tribe but my favorite is Susu because of it's health benefits and the taste in the mouth. ☺
SUSU
Introduction :
Susu is a well known delicacy among my people and it has been eaten right from when our ancestors were discovered.
Susu is made from Acha ( Digitaria exilis) and beans.
It is cooked with onion, ginger, seasoning cubes, salt, pepper, onion, palm oil and vegetables such as moringa leaves, spinach, ugwu or "hospital is far" (chaya). So for today, I will be garnishing my Susu using "hospital is far" ☺
I decided to use hospital is far as my vegetables for today simple because of its richness in iron, prevents cough and cold, aids indigestion, augment calcium in the bones and helps with weight loss.
Benefits of Acha:
- Acha contains vitamins, minerals, fibre, carbohydrates, protein, etc.
- It is also rich in energy, iron, aids digestion and it is highly recommended for diabetics and it is a gluten-free diet.
Benefits of Beans:
- Beans is a protein and plays vital role in maintaining and repairing the body.
- Beans contain folate, antioxidants
- it reduces risk of cancer, diabetes and glucose metabolism preventing fatty liver.
Ingredients:
🍴 Acha
🍴 Beans
🍴 Hospital is Far (vegetables)
🍴 Palm oil
🍴 Cooking seasoning
🍴 Salt
🍴 Ginger
🍴 Onion
🍴 Water

Recipe :
🔪 1 cup of Acha
🔪 2 cups of Beans
🔪 10 pieces of vegetables
🔪 2 cooking spoons
🔪 5 cubes of seasoning
🔪 1 tea spoon
🔪 tiny pieces of ginger
🔪 1 onion bulb
🔪 2 litres of water
First of all, I washed my beans, put it inside the pot, added my 2 litres of water, set it on the fire and allow to boil for 20 minutes.
My beans is cooking.
While the beans is cooking, I set out to wash my Acha using a small plastic bowl and a calabash to make it edible. (yes because there are a lot of sand in Acha)

Afterwards, I washed my pepper, onion, and veggies. Processing them for cooking.

Thereafter, I added my chopped onion, pounded peppers and ginger, palm oil, seasoning cubes and salt to taste into my already boiling beans on the fire.

After 10 minutes, I added my already washed Acha into the pot of beans on the fire and I used spatula to stir my food continuously for 2 minutes.
Then I covered it for another 5 minutes, opened, stirred and covered again for another 2 minutes.
Opened, stirred and added my already chopped vegetables, covered for 2 minutes and finally my food is ready.

Food is served.
NB: I switched from using cooking Spoon to spatula because using spoon in stirring Susu makes it burn in the bottom of the pot. ☺ 😄😃
